Sometimes I feel like all I do is try and come up with healthy and nutritious meals for my son. And at his current stage (14 months), one day he likes something and the next he doesn’t. If it’s an “no” kind of day, he does this obnoxious thing where he sticks his tongue out and lets the food roll off. To his credit, some of the concoctions I put together are not the tastiest… you can’t win them all! But this one was a keeper, Max even enjoyed these patties on two separate occasions #momwin. I will definitely be making these 7 ingredient turkey patties again!
It was so simple, here’s what I did…
I boiled a sweet potato. Once it was soft and mashable, I combined it with ground turkey, eggs, bread crumbs, parmesan cheese, and Italian seasoning in a bowel. Mixed it well so the turkey was pretty fine and mashed. The texture was moist so it stuck together but not too wet that they don’t have any structure (the same texture as meatballs before they are cooked). Then I stirred in the veggies. I used frozen peas and carrots because that’s what I had. I think next time I will leave out the carrots and maybe try chopped spinach.
Next I shaped them into small patties and pan sear them with a little bit of EVOO so they were browned on both sides.
Finally I transferred the patties to a greased cookie sheet and backed for about 20 mins at 350 degrees.
And just like that dinner is made for a couple of nights. I kept a few in the fridge and froze the rest for those grab-and-go kind of evenings.
Turkey Patty Recipe
makes about 12 small patties
- 1/2 – 1 lb of ground turkey
- 1 sweet potato
- 2 eggs
- 1 cup of bread crumbs
- grated parmesan cheese to taste
- Italian seasoning to taste
- 1 cup of frozen peas and carrots (or veggies of choice)
Preheat the oven to 350 degrees. Peal and cut sweet potato into quarters. Boil until soft and mashable. Combine sweet potato and ground turkey, mash until fine. Combine remaining ingredients. Shape into patties. Pan sear patties in EVOO. Brown on both sides. Transfer patties to a greased cookie sheet and bake for 15-20 minutes.
